Super Easy Potato fritters (Aloo ke pakoray) Recipe

I can express myself in English normally, but when it comes to recipes, I have to look (more specifically google) the names of ingredients in English from Urdu. Pakoras are a very famous South Asian dish. Especially in Ramdan they are considered an essential snack for Iftar. So, here goes my mom’s recipe for making potato fritters.

Ingredients

2 medium sized potatoes (pealed and sliced into circular slices)

1 cup gram flour

1 teaspoon heaped of red chilli powder*

2 or 3 pinches of carom seeds/ ajwain

2 green chilli

Some Coriander leaves (chop into smaller pieces)

1 pinch of baking powder (sodium bicarbonate soda)

2/3 teaspoon of salt (heaped)*

*Note: If you are using a 5 ml teaspoon than there is no need of heaping, you can add leveled teaspoon. Also the salt and red chilli powder can be adjusted according to your taste. If you taste the batter you’ll know how much of these ingredients are required.

Methodology

  1. First of all add all ingredient into gram flour and add a little water to form a slurry. The slurry should not be very thick or thin. Just a small amount of water will be required.
  2. Now, take a utensil or pot in which the pakoras are to be deep fried.
  3. Take a potato slice, dip it in the slurry you have made to make a cover over it, and add to the pot for deep frying.
  4. Add as much slices in the same manner that the utensil can hold.
  5. Remember that the flame should be high while adding slices, then you can turn it to medium.
  6. Deep fry until the skin becomes nearly dark brown (see the picture).
  7. Now, serve with chat masala or ketchup.

Microwave Oven Baked Delicious Brownies

My friend makes these delicious brownies and she often brings them to university for us. She shared the recipe with us on Facebook a couple of months ago. I tried out this recipe this week. The brownies turned out to be great. My family loved them. I hope if you’ll try making brownies using this recipe, you’ll love them.giphy.gif

Ingredients:

  • Maida or all purpose flour: 1 1/3 cup
  • Baking powder: 1/2 tsp
  • Baking soda: 1/2 tsp
  • Sugar: 1 1/3 cup (Plz grind the sugar into fine powder before use. I know its silly but I always make this mistake)
  • Oil: 1 cup
  • Coco powder: 1/2 cup
  • Milk: 1 cup
  • Eggs: 2

Method: 

1. Firstly, sift the all purpose flour or maida. Mix in the baking powder and the baking soda with the flour in a tray (to allow more air to enter into your flour mix) and set it aside for 30 minutes.

2. Meanwhile, separate the egg yolks and whites. Take the egg whites in a bowl and beat for about 15 minutes(or until the foamy white mixture does not drip off if you turn over the bowl). Then, add in the yolks and beat for another 5 minutes (a total beating of the egg mixture of 20 minutes)
In the egg mixture add the rest of the ingredients; sugar, oil, coco powder, and milk. Keep beating at medium speed.

Then, slowly add in the flour mixture, little by little. Turn off the beater and beat with a fork, to prevent the formation of ‘ghutlian‘ or lumps.

3. Transfer this brownie mixture into a bowl for heating in the microwave. Oil the bowl or dish and pour in the mix. Bake in the microwave for 8-9 minutes.

4. While the brownies are getting done, prepare the topping with a little bit of milk, using chocolate bar or cooking chocolate and nuts or bunties as per your own choice.

5. Dish the brownies out, slicing along the edges your dish with an oiled knife. Dish out and add the topping. Serve!

1 cup = 250 ml
1/3 cup = 5 tbsp + 1tsp

With Love – Mom

So, a couple of days ago my family went for grocery shopping (while I was preparing for a quiz). They brought home many things. But more importantly, they brought one whole shopper containing noodles. Lots and lots of spicy noodles. Yup, these are the same spicy noodles that inspired me to get over dramatic :-p.

What was special about these noodles this time? Well, the noodles were packed in cute lunch boxes. Here is an unclear picture of one.

You must be thinking why I am sharing all this nonsense. So, here goes the explanation. My mother loved these new and free lunch boxes. When I came home yesterday, she told me that she found out a very beautiful thing about them.

“What is it mother?” I asked.

“This lunch box,” she said while handing it on to me so that I could observe, “This lunch box says ‘With Love Mom’ on top of it. After reading this I thought that whatever it says is true. When a mother packs lunch for her child, she is not only fulfilling her duty, but she also does this with love. When I give you lunch, I see to it that what is that you require. I consider that your sister is allergic to eggs. I know that you don’t want an omelette in your lunch today.”

And I know that she is correct. We leave home at 7 am and she makes lunch such that I get an omelette with onions and green chilies (just the way I like it), while my sister gets a simple omelette (just the way she likes it).

Yeah, I know you look pretty harmless and can be a collection of all my beautiful memories, but I also know that you are not as harmless as you look. I have heard that many of your friends open up easily to those who they are not meant to open up to. I can trust people but not you. You can betray me easily. You always get into wrong hands. Always….

It’s not like I never wanted to trust you or others like you. I have tried to, but failed. I am always inconsistent in talking to you. I tried many times but I cannot make a friend out of you. I never have fun in having this one way conversation with you. Don’t you understand? I want you to yell at me when I am wrong and  cheer me on when I am right. You do none of these. You just lie down, lifeless. Hearing but not listening.

Whenever any one gifts me a diary, I love it but I don’t know what to do with it. First I started making slam books out of diaries, but then I stopped doing that, because I am not good at keeping slam and autograph books.

Well, now I am using you for useful matters. I am writing all my cooking recipes on you. This way I can get help from you whenever I want and you won’t ever be able to betray me. I wouldn’t have to worry about you. And Yeah, you look cuter this way.

Cloud Seeding (Artificial Induction of Rain) – An Interesting Phenomena

Are you curious about how we can artificially induce rainfall??? How can we bring rain to an area where it usually doesn’t rains or an area which experiences less rainfall??? Well, read this article and find out. I hope you’ll find it interesting and informative.

Before going towards cloud seeding you need to know that how rain is formed. I’ll explain it in as easy words as possible.

  1. First of all, air currents enter water vapors into the atmosphere.
  2. Then, these water vapors condense onto small particles that are known cloud condensation nuclei (CCN). These particles are less than a micron (10^-6) in diameter. The condensation takes place just like water vapors condense on a sauce pan’s lid when water is boiled in it.  Now, this is the step at which cloud seeding kicks in.

  1. After this step the raindrop is formed and it starts to grow in the size.collision
  2. When the droplet gains enough weight to exert force downwards and to cancel the upward thrusting force (More weight will overcome the upthrusting force), the raindrop falls to the ground. Upthrust

Now that you know the whole process, you can easily understand how we can artificially induce rain.

Sometimes it doesn’t rains in an area just because there are no CCN particles for the water vapors to condense. Or it rains less in an area because of less CCN particles in the atmosphere.

What we do in cloud seeding is that we artificially introduce CCN in the atmosphere. Once CCN particles are introduced, the water vapors begin to condense on them and the water droplet forms. After growing to its size, the rain drops fall to the ground as rain. CCN particles can be silver iodide particles, potassium chloride particles, etc. This picture perfectly represents the process of cloud seeding.

And yes even atmospheric pollutants, such as aerosols, can act as CCN. But if there are more aerosols than a certain threshold limit then they will stop clouds from raining and the cloud will continue to grow until it reaches a certain temperature, at which rainfall occurs. Now, this can affect badly, because at first there will be drought and afterwards there will be a very heavy rainfall (as the overly grown and high energy containing cloud will rain), which may result in flood. 3 Minute Chocolate Mug Cake

I tried out this amazing recipe today. This chocolate mug cake was easy to make and very delicious to eat. I loved this recipe because I didn’t have to use my gas oven, which either half cooks or burns cakes when I try to cook them properly.  This cake is made in a microwave oven.

Ingredients

4 Tablespoon flour

4 Tablespoons of milk

4 Tablespoons of oil

4 Tablespoons of sugar

2 Tablespoon cocoa

1 egg

3 Teaspoon chocolate chips (optional)

1/2 Teaspoon vanilla extract (some even add jam but I didn’t add the last two ingredients)

Method

1. First mix all the dry ingredients in a coffee mug.

Tip: Remember use castor sugar or powered sugar.

2. Now add egg in it and then add milk and oil.

3. Mix the batter thoroughly.

4. Place this coffee mug in microwave oven. Set the power at 1000W for 3 minutes.

5. Take out the coffee mug and cool it. Then serve.

Tip: You have to balance the amount of sugar added.For example, I had to add 5 tbs. because I was’nt adding any  chocolate chips.
